The Very Best Chocolate Chip Cookies You've Ever Had In Your Life

I'm not joking.  Here we go:




Blue Ribbon Chocolate Chip Cookies


Here's what you need:
1/2 cup (1 stick) unsalted butter
1/4 cup shortening 
Of course you can just use 3/4 cup butter if you don't have any shortening, but shortening improves the consistency and makes them taste better.)


1 cup packed brown sugar (I use light brown.)
1/2 cup white sugar


1 TB vanilla extract
1 egg
1 egg yolk



1 cup white or all-purpose flour
1 cup wheat flour 
Of course you can just use 2 cups all-purpose flour.  But if you can use wheat flour, I think the consistency of the 50/50 mix is perfect for chocolate chip cookies.

1/2 tsp salt
1/2 tsp baking soda

2 cups semi-sweet or milk or dark chocolate chips, preferably Ghirardelli, because damn they're really good


Here's what you do:
Preheat oven to 325.  Grease cookie sheet.  

Sift together flours, soda and salt.  If you don't have a sifter, combine the ingredients in a bowl and gently fluff and blend them together with a fork.  Set aside.

In a large saucepan, melt butter and shortening over very low heat.  When completely melted, turn off heat and stir in sugars with a wooden spoon.  Blend until smooth.  

Stir in vanilla, egg and egg yolk, mixing well after each addition.

Stir in flour mixture in 3 parts, blending until smooth after each addition.  

Stir in chips.

Use a tablespoon to measure each cookie, and place an inch apart on cookie sheet.  

Bake 15-17 minutes at 325, or until edges start to dry.  Let stand on cookie sheet for 3 minutes, then remove to wax paper for 10 minutes, then into tupperware or a cookie jar for safe keeping.

The traditional Nestle Toll House Cookie recipe uses 3/4 cup each brown and white sugar, whereas these give the brown sugar a 2/1 advantage, which I believe makes them lighter and chewier.
These add the additional egg yolk, which definitely makes them chewier.
And the butter/shortening mix, and white/wheat flour mix, are unique to this recipe and really make them something special.
